These Sticky Lamb Riblets will work great for a party or serve with steamed rice for a mid week dinner.

¾ cup honey

¹⁄³ cup oyster sauce

4 garlic cloves, finely chopped

2-3 whole star anise

1.4kg lamb riblets



Place honey, oyster sauce, garlic and star anise in an 8-cup capacity baking dish. Season with white pepper and sea salt, mix to combine. Add lamb riblets and toss to coat. Leave to marinate for 20 min.

Preheat oven to 180°C (160°C fan forced). Cook riblets for 45 min, turning twice during cooking. Then cover the dish with foil and return riblets to the oven for a further 15 min.

Serve with steamed rice and seasonal green vegetables. Garnish with sliced fresh chilli and coriander sprigs.
